Kale is one of many nutritional powerhouse ingredients found in Evermore, and this yummy, addictive snack kept us happy during Evermore Me. Its deep green color comes from the pigment chlorophyll, and its antioxidant, anti-inflammatory, and immune boosting properties have been shown to fight and prevent cancer, lower blood pressure and LDL cholesterol levels, normalize digestion time, support retinal health, and fight harmful free-radicals.
NOTE: We recommend baking these at low heat for longer time, so all moisture gets released. This way, the chips stay crunchy for as long as you can resist gobbling them up!
Evermore Salt & Vinegar Kale Chips
Ingredients
1 bunch of kale (any variety)
1 tablespoon apple cider vinegar
1 tablespoon pumpkin seed oil (extra-virgin olive or avocado oil work great, too!)
1/2-1 teaspoon sea salt
A few grinds of freshly ground pepper
Optional: 1 teaspoon ground cumin, pinch of cayenne
Preparation
Preheat oven to 190ºF (or 200ºF, if oven does not go lower). Remove kale ribs, tear into pieces, and wash in salad spinner. Dry thoroughly, and add leaves and remaining ingredients to mixing bowl. Massage leaves until mixture is well distributed. Bake on two half-sheet pans for 2-2½ hours, until all leaves are fully crisp. When they seem done, bake for another 10-15 minutes. Remove from oven, let cool, and enjoy!
